History

Pingyang Huangtang (平阳黄汤) is a historic yellow tea from Pingyang county in Wenzhou, Zhejiang province. It was once a celebrated tribute tea during the Qing Dynasty but nearly went extinct in the mid-20th century as yellow tea production declined across China. In recent decades, dedicated local artisans have painstakingly revived the variety using historical records and surviving cultivars. Today it remains extremely rare - one of the most limited-production yellow teas in existence.

Processing

Spring buds and young leaves are carefully picked, then kill-green at controlled temperature. The crucial 'men huang' step involves wrapping the tea in special paper and allowing it to yellow slowly in a warm environment for 6–8 hours - longer than many yellow teas. This extended yellowing creates the tea's signature honeyed smoothness. The tea is then dried at low temperature to preserve its delicate character.
