History
Junshan Yinzhen (Jun Mountain Silver Needle) is one of China's rarest and most storied teas, from the tiny Jun Mountain island in Dongting Lake, Hunan province. It has been an imperial tribute tea since the Tang dynasty and was reportedly Mao Zedong's favorite tea. The island is so small that only about 500 kilograms of authentic Junshan Yinzhen can be produced annually. Its unique 'men huan' (sealing yellow) processing step creates a flavor unlike any other tea category.
Processing
Only plump, golden buds are picked. After a brief kill-green step, the buds undergo the unique 'men huan' process: they're wrapped in cloth and gently heated, allowing slow, non-enzymatic oxidation over 48–72 hours. This 'yellowing' step removes the grassy notes of green tea while developing a smooth, sweet, mellow character. The result is a tea that's gentler than green, less oxidized than oolong - truly its own category.
Tasting Notes
Appearance
Plump, straight, golden-yellow buds covered in fine down. When brewed in a glass, the buds perform a famous 'dance' - standing upright, sinking, and rising three times. The liquor is a luminous apricot-yellow.
Aroma
Mellow and sweet - sweet corn, roasted chestnuts, and a gentle warmth. Distinctly different from green tea's grassiness.
Taste
Remarkably smooth and mellow with sweet corn, chestnut, and honey notes. Zero grassiness, zero bitterness - just a round, gentle sweetness with a clean, comforting finish. This mellow character is what makes yellow tea unique.

Western Style
- Leaf: 3g per 200ml
- Water: 75–80°C (167–176°F)
- Time: 3–4 minutes

Gongfu Style
- Leaf: 4g per 100ml
- Water: 80°C (176°F)
- Time: 30s first, +15s each subsequent
- Infusions: 4–5 infusions
Step-by-step
- Use a glass. Brew in a clear glass to watch the famous 'three rises and falls' of the buds. Tip: This is one of tea's great visual performances - don't miss it.
- Cool water. Use 75–80°C water. The delicate buds need gentle treatment. Tip: Pour slowly down the side of the glass to avoid disturbing the buds.
- Watch and wait. Steep 3–4 minutes while watching the buds dance upright in the glass. Tip: The buds rising and falling is caused by gas bubbles attaching and releasing.
