What it's for

Without a gongdaobei, the first cup poured from a teapot is weaker than the last, because the brew continues extracting as you pour around the table. Decanting the entire infusion into the gongdaobei first stops extraction immediately and evens out concentration so each pinming cup gets identical liquor. It is the most important auxiliary vessel in gongfu service.

History

The name gongdaobei, literally fair way cup, references a Chinese legend of a wine vessel that drained itself if overfilled, used to teach the virtue of moderation. The modern decanting form is a 20th-century Taiwanese innovation, adopted as gongfu cha was being codified for public teahouse service. Earlier Chaozhou practice poured directly from pot to cup in a continuous side-to-side stream (called Han Xin checks the troops) to achieve the same evening effect; the gongdaobei made this skill optional.

How to use

Place the gongdaobei beside the brewing vessel. After the steep is complete, pour the entire contents of the gaiwan or teapot into the gongdaobei in one motion, then distribute to cups from the pitcher. A built-in or separate strainer can catch fine leaf fragments. Keep the spout angle low and steady to avoid splashing. Empty fully between infusions.

Buying tips

A good gongdaobei pours without dripping; test the spout with water before buying. Glass is the most practical default because it lets you read liquor color, which is a key brewing feedback signal. Capacity should match your brewing vessel; a 200ml pitcher pairs well with a 100 to 150ml gaiwan, giving room for two infusions if needed. Avoid pitchers with rubber or plastic handle inserts.
