Definition

A Chinese brewing method using a high leaf-to-water ratio, small vessels (typically a gaiwan or small teapot), and multiple short infusions - often 15–60 seconds each. The name translates roughly to 'making tea with skill.'

Why it matters

Gongfu brewing lets you experience a tea's flavor evolution across many steeps, revealing layers that a single long infusion would blend together. It's the best way to fully appreciate high-quality oolongs, pu-erh, and many Chinese teas. Each steep tells a different part of the story.
