Flash Brewing
Definition
A method for making iced tea by brewing with half the normal water amount at full temperature, then pouring immediately over an equal weight of ice. The hot water extracts flavor while the rapid cooling locks in brightness and prevents the flat taste of slow-cooled tea.
Why it matters
Flash brewing produces iced tea with the clarity and complexity of hot tea - something cold brew and refrigerator-chilled leftover tea can't match. It's the preferred method among Japanese tea professionals for iced sencha and gyokuro.
