Definition

Steeping tea leaves in cold or room-temperature water for an extended period (4–12 hours, typically refrigerated). Cold brewing extracts sweetness and umami while leaving behind most of the astringent catechins and caffeine that dissolve primarily in hot water.

Why it matters

Cold brew unlocks a different dimension of tea - smoother, sweeter, and naturally low in caffeine. It's an easy way to enjoy delicate teas like gyokuro or silver needle in summer, and requires zero technique beyond patience.
