What it's for
The Western teapot is built for the British model of tea service: a single, longer steep producing enough liquor for several cups served with milk and sugar. The shape favors black teas brewed Western style, where leaves are given five-plus minutes to fully extract. It is the wrong tool for gongfu sessions but the right tool for a pot of breakfast tea shared at a table.
History
Western teapots evolved from Chinese export wares in the 17th century. The English Brown Betty, made from red Etruria Marl clay in Stoke-on-Trent and finished with a Rockingham brown glaze, became the canonical form in the 18th and 19th centuries and was reputed to make better tea than any other pot, a claim cooking writers still defend. Wedgwood, Spode, and Royal Doulton built the higher end of the market with bone china. The cottage and country styles that followed are direct descendants.
How to use
Warm the pot first by swirling boiling water inside and discarding. Add roughly 1 teaspoon of loose leaf per cup, plus one for the pot. Pour fully boiling water over leaves for black tea and steep four to five minutes. Decant through a strainer into preheated cups, or use a built-in infuser basket. For best results brew without milk in the pot and add milk to each cup individually. Rinse, never scrub the interior dry; a thin tannin film is a good thing.
Buying tips
A genuine Brown Betty must be made in Stoke-on-Trent from local red clay; many imitators use the name. Look for a non-drip spout, which is the practical test of any Western teapot. A 4- to 6-cup size suits most households. Avoid pots with permanently fixed metal infusers, which cannot be removed once steeping is complete and lead to over-extraction.
