Withering
Definition
The first step in tea processing where freshly picked leaves are spread out and allowed to lose moisture, becoming soft and pliable. Withering can be done naturally in ambient air or accelerated with warm airflow, and typically lasts 8–24 hours.
Why it matters
Withering initiates subtle chemical changes that develop aroma precursors. Insufficient withering produces flat-tasting tea, while over-withering can lead to premature oxidation. The duration and conditions of withering significantly influence the finished tea's fragrance.
