Shizuoka

Shizuoka is Japan's largest tea-producing prefecture - the source of classic, balanced sencha and a wide range of mainstream Japanese green teas.

Shizuoka prefecture, along the central Pacific coast of Japan, accounts for roughly 40% of all Japanese tea production. The volcanic soil, mild climate, and tea fields stretching from coastal plains up to the foothills of Mount Fuji produce the most classic, balanced expression of sencha - the everyday Japanese green tea. Shizuoka sencha tends toward a clean, fresh, slightly grassy character with moderate umami - neither as intense as Uji gyokuro nor as bold as Kagoshima sencha. Specific areas like Honyama, Kawane, and the Tenryū river valley are noted for higher-quality tea from older, hand-tended gardens.
