Hangzhou, the capital of Zhejiang province, is synonymous with Longjing (Dragon Well) tea. The hills around West Lake - Shifeng, Meijiawu, Lion Peak - yield the most prestigious Longjing, hand-pan-fired into the tea's signature flat sword-shaped leaves. Pre-Qingming Longjing (picked before April 5) commands the highest prices and offers the sweetest, most refined cup.
