Definition

A finishing step where processed tea leaves are heated over charcoal or in electric roasters to reduce moisture, develop toasty or caramel flavors, and stabilize the tea for storage. Roasting levels range from light (preserving floral notes) to heavy (producing deep, chocolatey character).

Why it matters

Roasting is the signature technique behind Wuyi rock oolongs and many Taiwanese oolongs. A skilled roaster can transform a tea's character entirely - the same base leaf roasted lightly vs. heavily produces two completely different drinking experiences.
